Tracy’s talk is called “Serve This, Not That!” in which she explains that no matter the reasons for the increase in requests include—growing international attendance, increase in chronic disease and aging workforce, rise in food allergies, more attendees choosing to eat vegetarian or vegan, diverse religious dietary requirements, growing acceptance of alternative diets or a general desire to eat healthier—we, as hospitality professionals need to learn how to accommodate their needs.
Understanding the basic guidelines for the most prevalent requests and planning properly can go a long way.
